Let's be unbiased.
If Link starts off the fight with no weapons or equipment, he is nothing more than a normal person. Obviously, he wouldn't be a match for someone with superhuman abilities.
In Link's defense, if he is allowed to prepare for the fight, he becomes much more of a match for Sephiroth.
So against a uniquipped Link, yes Sephiroth does kills him quickly. But against a prepared Link, the story is different.
Considering the fact that Sephiroth is evil, the Master Sword also becomes a factor.
