When he got stabbed by that stick-throwing dude in X3, it took him several seconds to recover.

You reminded me of something, Wolverine is also quite fast, he did block those flying spikes with his claws.
Edit: Deathstrike also had strength over Wolverine, the Nazi doesn't; in fact Wolverine is a lot stronger than he is, from movie feats.

Or his head, chest, shoulders, mid-section, legs and those blades only protect one side of his arms.

No one is arguing he isn't a tough opponent or tough to take down, but his opponent has one of the best healing factors to keep him going indefinitely and an unbreakable skeleton, whole damage to the Nazi isn't healed (at least not right away), so every hit Logan lands, is going to stack up.
How do we know it severed his spine? Does he have a spine anymore?
