The robot hit the energy field and it sliced right through it. Stands to reason that energy field = heat and intense heat is what caused the cutting, doesn't make sense to believe it was some short of concussive force that did the cutting.
The shiny metal bits were metallic alloy of some sorts, namely the the frame, for the lack of a better word, the white material on the face, body and various other parts was [probably] some polymer.

Use logic, it was an energy field and it cut cleanly through one robot while it merely burned Sonny (who was upgraded).
Energy field + cuts cleanly through alloy + burns marks on Sonny = it uses heat energy to cut.

If we're talking about General Grievous being at 100% here, It might be tough for Sonny to get that close. OB1 cut off Grievous' hands, losing his sabers. Sonny has nothing that could cut off GG hands. He'd have to get in close and try and rip them off, which is suicide cause he'd get diced up.
Sonny being "diced" by the sabres is arguable, as he's been upgraded to specifically resist intense heat/energy.
One hit from Sonny at GG's soft center and he's going down.
