Wolverine hurted a tad Thor, he have adamentium claws, and he's a tremendous fighter, so it's very possible that he can escape blows from Thor.

And Thor won, without really putting heart in that.

Seriously, it was perfect for a fight.

Unless you think just any people can avoid things moving at mach 3.

To be honest, I don't know which specific moment you're talking about, but since it's Iron Man I immediately know he was likely moving in a straight line because he's just a man with rockets strapped to his feet. And if it was anything like when Thor whomped him after coming back to Earth, I'd consider that shot significantly easier to make than tagging someone slower but moving more erratically.
