If we're going strictly with GT logic, then the disk wouldn't even register on Gogeta's radar, and would splash at his waist upon contact. GT isn't canon though, and I'm pretty confident that's not the purpose of this thread.
In regards to the disk being used in the canon series, it has NEVER failed to cut something. Going by logic, it should even be able to sever the likes of even Beerus or someone above him. The only reason it has never been effective on a villain before is because almost all of the main villains in DBZ have had regeneration or something akin to that.
However, it could be reasoned that it simply bypasses all durability and can cut through anything no matter what.
This could potentially make someone like Krillin able to effectively kill someone like Jiren if it were plausible for him to actually land the move.
However, a similar attack, the Makkankosappo, was recently shown in DBS to not have INFINITE piercing capacity, meaning the same could potentially be observed in the destructo disk at some point down the line. Piccolo wasn't able to pierce one of the other Namekians with his Makkankosappo until he charged it fully, meaning it has finite piercing ability. The same could be true for the Kienzan, but as for now we just can't know for sure. Hopefully Super retcons and explains it at some point. I just couldn't imagine Krillin being able to kill someone like Zeno or Whiss simply by catching them off-guard.
