Shaw's durability doesn't increase as he absorbs kinetic energy, nor does he only absorb a percentage of kinetic energy from each blow -- if that were the case he would have died a long time ago, killed by warpath, or gambit, or cyclops, or any number of people. For him to be cut like wolverine is like Supes taking a hit from someone with human reflexes, and is not admissible here. Gravity and momentum are also PART of the kinetic energy that Shaw would be absorbing, so slitting his throat by coming in at a tangent won't help Creed either. THE ONLY WAY Creed could beat him is by using the battle-field very cleverly somehow, which is probably not going to happen. Since he isn't powerful enough to overload Shaw, SS wins 10/10 (or we could give Creed .1/10 for a clever battlefield victory).
This is based on real world physics not on panel happenings. If shaw could absorb all kinetic energy thrown at him he'd be as unmovable as the blob or the juggernaut, but his showings don't support this. And again, he has been cut and whether or not this makes sense in terms of a scientific analisys of what his power should be is secondary to on panel evidence. All superpowers violate the laws of physics anyway.

Lightsabre cuts with heat, as would a cutting laser, debatable if the kinetic energy is transferred.
Shaw did have trouble dealing with lightning before, so it's likely those two mentioned above would harm him.
Either way, it's a moot point here, Sabretooth has claws/teeth and those definitely rely on kinetic energy to cause damage, so he's getting his arm ripped off and it's being shoved up his ass, once Shaw absorbs enough punishment.
