Newton's Third Law. I still don't buy it that Shaw can't get cut by a knife. I don't know. There is nothing to protect him from getting sliced. He can absorb the energy obviously, but can't be invincible to slicing.

Shaw absorbs physical damage applied to his body and stores it.
Bishop absorbs energy based attacks. Like a battery.

Comics seem to be inconsistent when it comes to issues of heat and force -- for instance, gaze weapons that are supposed to consist of one or the other often appear to take on other qualities (sometimes Superman's heat-vision appears concussive, Cyke's blasts act like lasers, etc.). Some of Shaw's absorption feats appear to exceed the kinetic stipulation.
BUT YES, PINKSUSHI, when Creed or Logan try to cut Shaw, the effect should be that, when they hit him, they lose all momentum, and it's as if they were gingerly holding their claws against his skin without making any attempt to cut him. Falling on a spike shouldn't affect him either. Fire, radiation, and electricity should all affect him like a normal person, but marvel hasn't been consistent on this. It's possible he has other absorptive powers that aren't fully outlined. Sabretooth literally has NO WAY of beating him without using features of the battlefield against him (BFRing somehow, using equipment in a high-tech lab, or something like that).

So basically Shaw's skin can't be cut or pierced then.
