Wolverine vs Ryu and Iron man vs Morrigan I can understand. But Chris going up against Hulk? Yes its for the cinematic thing but still.

Maybe it's a reference to the fact that Chris always fight these super powered humans that are physically superior to him.

MVC 3 is a great game that I have played. One of the things that I didn't like about MvC is that the FF got NO representation. I loved MVC 2.

Yes, where is Final Fight? Well...Captain Commando is like descendant of Cody, so he may count.
