Thats.... exactly what happened. He did casually pwn the party before they even fought. He did hand them their asses. Then he got weakened by draining the Exile, then he was still too powerful for them, so Visas had to do force-bond shenanigans to weaken him further.
Where did all the instant planet-busting go? Where did the Vader-style telekinesis go? He stunned the Exile, exchanged some pleasantries, then tried to Drain her. Then the party stopped him with some half-assed "Give me a second to discuss trying to interrupt YOUR POWAH! with my blind chick". Then he died.
Where did the capital ship-sized TK awesomeness go? He did bugger all in that fight.
On Nihilus vs. The Exile:
First and foremost, what shape was Nihilus in going into the fight?
Tobin: "The Master suffers... If he can not feed, then the hunger begins to consume him"
Tobin: "[Kreia] spoke of the Jedi academy here on Telos...and my Master was forced to come here."
"If there are no Jedi here, then my Lord cannot feed his hunger. He will destroy the planet, the station... he will cleanse it of life. ...and if there are no Jedi below, he will have no other choice."
It's pretty apparent Nihilus is basically starving to death. He went to Telos IV like a dying man in a desert crawls to an oasis.
Then the actual confrontation happens. Nihilus' first move is to Stun The Exile. With a gesture, he's already won the fight.
Unfortunately, he "suffers" and vainly tries to feed off The Exile. This weakens him even further.
And yet:
Visas: “He... is too powerful...”
So, the only canon account we have of how that first skirmish went was that apparently he was either beating the crap out of all of them or whatever they did had no effect. And this is him doubly weakened.
But yes, Nihilus does eventually lose the fight. If he had chosen to, however, he could have beaten the Exile in the first seconds of the fight. It took his own hunger weakening him as well as a failed drain of THe Exile to bring him down to a level that the heroes could even hope ti fight him at.
So yes, we didn't see any planet-eating or massive TK from him because the idea is he was too powerful to be confronted in that state. The protagonists had to finish him while he was handicapped.

Yeah, I always hated that. You hear about this Sith Lord blowing up planets and juggling stars and when you finally fight him you completley destroy him. No special abilties, no uniqueness at all, just another random Sith Lord but even easier.

So what you're saying is that Nihilus was severly weakened and starving to death but yet he still had enough in him to destroy an entire planet, but then all that power was taken from him because of a failed attempt on one individual.
It just doesn't seem right.

True, gameplay in Kotor 2 was pretty much broken. Any decently put together character can solo the entire game fairly easily. Though imo it's strengths in terms of story and characters make up for that lacking.

I'd say it matters.Evidently N. is unrivaled in his ability to feed on planet's life, but in combat situation he sucks big time.
Jesus, whats with the attempts to downplay N.? The guy had to be triply weakened for you to even stand a chance of beating him. Just because he doesn't do anything flashy in combat doesn't make him weak. Sidious barely did anything flashy in combat either and he's held up as the one of the 3 greatest combatants in SW.
How many kills are necessary to beat KOTOR 2? I mean, how many people must die in order to win? Nihilus, Sion, Kreia. Any other "Must kills"?
The Exile has canonally killed 'hundreds'.
