According to Wiki: Dooku also left the medical center, but was soon attacked by Mace Windu. Dooku was outmanuevered by Mace after a short light-saber duel, however and forced to have his Magnaguards grapple the jedi.... while Dooku headed for the evacuation point.
Sounds like another point against Dooku.

I'd say Dooku and Mace's technical skills with the saber are almost even. However, I would say Mace would win more times than not due to his speed, strength in the force, and vaapad.
