So, we have on one hand we have Yoda who supposedly cannot forcecrush or even grip Khan because we never see him do that despite it being well within his power set. And on the other hand, we have Shao Kahn, who has never actually demonstrated Soul manip onscreen, yet because it is supposedly within his powerset, it is admissible.

Now, with that out of the way, prove Kahn can manipulate Akuma's soul, when it has demonstrated repeatedly to resist the more powerful soul destruction.

No, we don't, we see him do a power transfer from Shang to Sindel, but that's it, and it is still not inductive of him taking Akuma's soul.

If your reffering to the mass soul rip, that's not Shao doing all that. Quan Chi aided with significant prep time and ritual. Shao won't be able to get time for prep and rituals before Akuma busts him into a gaudy red mist.
