Thanos did use his shields against Odin. Thanos also used his shields against someone less formidable than Odin, PG Thor and Thor ripped through it.
I'm not taking anything from Thanos, that fight showed he was above Herald levelers but Odin, no, just no.

I agree, Zeus did own Hulk. Do you think I would argue against this? Zeus would own WBH as well or any other Hulk if you can think of some as powerful as the Hulks I've mentioned.

Odin was greater than Thor but Thor had an inexhaustible limit which isn't the case with Odin. Thor didn't have a cap limit either. Thanos didn't use his best shields against Thor either.
Odin only started damaging him during the gungir blast. Before that Thanos was without a scratch.
