It probably will eventually. That happened to Jedi Outcast, so I don't see why it wouldn't happen to Jedi Academy.

I read the final line-up for species somewhere, but now I can't find it.

I know that we are restricted to Kel Dor male, Rodian male, Twi'lek female, and Zabrak female, when it comes to gender choosing. Obviously, humans have both genders. 🙄
