The Force still enhances reflexes and strength during saber combat. Dooku stomps.

Dooku wins, solidly. Dooku easily beat AOTC Anakin and Obi Wan together, and Id pick those 2 jedi to beat Jaime and Ned, not to mention he held his own in a saber battle with Yoda. Lannister and Stark are tops for their world, but their world doesnt hold a candle to what jedi/sith are capable of.

Dooku can't use the Force offensively; he's been barred. Ned and Jamie's weapons are, per divine fiat, resistant to Dooku's lightsaber. He's restricted to solely the speed and agility depicted on film which, while considerable, isn't enough to blitz these two.

Did you see how fast Dooku moved in battle when he was fighting Yoda? Trust me, thats more than enough to slice Jaime and Ned to ribbons.
