they should have 5 the last one in the franchise
in addition to wolverine and storm, gambit is supposed to have his own movie. maybe they'll have gamibt and rogue in their own spinoff..
I just want to see juggernaut and sinister in the movies.
And apocalypse as the last movie with his four horseman and loads of cameos by x-men and x-villians.
Here's how I see it
Here's how I see X-men 3. It will somehow involve the Sentinels. They tried to use them in X2 and couldn't so they will definetly use them in the next one. The plot will probably revolve around some mutant attack and there will be a knee jerk reaction by Washington to start up the Sentinal Initiative. Mutants will become hunted and the X-men will be the ones to save the day.
As far as what characters will be involved I definetly think Collossus will be in it along with the regular cast. You will probably see alot more of the students and there powers. Beast may have a role in it because of the new hunt for mutants. Hank McCoy will have his famous accident and become the blue furred dude we all know and love. He will be hunted and saved by the X-men. Xavier will ask him to join them and he will. Gambit, unfortunatley will probably not have a major role in the next movie, but he may make a cameo, along with Angel.
As far as spinoffs go I highly doubt any others but a Wolverine one. A Storm spinoff may be being worked out but it won't happen. Storm has never been the lone wolf character that Wolverine has been.

I'm sorry, I don't understand why everyone makes a big deal of WOlverine. . . I like him too, but powers wise, he's not the most powerfullest. (not that this means anything.)
But come on. LEt's have a spinoff with the mutants that live in school
They go to school, have things going on and etc etc.
It'll be nice to them find a mutant, (someone we haven't seen yet, like Berzerker, Magma or Wolfbane) and we can see the new recruits try and get them to go the school. Then they can have their own adventurers and have the main X-men make there appearances here and there.
They have the Hary POtter surroundings. They might as well use it.

A storm and Gambit spinoff movies have been talked about numerous times by various people involved with the X movies (producers, writers etc..)
So they're will be more than just wolverine. at least there better be because wolverine isn't all that anyway.
