The orca isn't eaten and is destroyed which is a bit vague to me. Logically there is no way jaws can eat the orca so its body or pieces of it are still there. Khan obviously would use this as a barrier between the two.
27 seconds in we see Jaws isn't intelligent and just eats the object like a dummy. Khan has the intelligence edge obviously. He also assesses the advantages he would have in this situation. After he eats the object he goes away showing he doesn't consistently press especially when you put something in his mouth or stave off his attack.
1:35--1:44 in we see the mere human use the barrier or rest of the ship and damage jaws exterior. Jaws goes away again after this to again make another pass so it also backs up earlier claim that he makes different strikes and gives the humans time in between attacks.
In between the passes Khan will tear out the orca teeth and use them as an offensive weapon. Khan has crushed a skull before so tearing a tooth off a whale should be no issue.
TEETH: 40–52 large, conical, inward-curving teeth in upper and lower jaw.

Khan will always use the orcas body as a barrier to either springboard off or just bide time for another attack. These teeth will be the weapon Khan can wield to strategically wear down the shark and always be one step ahead. His cellular regeneration is superhuman so he can do this all day and all night without tiring though I don't believe someone with his strength feats will take that long.
