So looked brought it as well. Vos goes full dark side and disarms Dooku. But Dooku catches Vos's wrist when Vos attempts the death blow and manages to disarms him as well. Dooku then wins as Vos is surrounded by droids and the Dooku retrieves his saber. Didn't see any mention of Vos being unpredictable though.

Is it the same fight scene where

Vos is throttling Dooku and Dooku persuades him to relent by offering to team up against Sidious? Because that's the one where the book says Vos's unpredictability triumphed over Dooku's technique.

Dooku is fighting bog of them and it's a decent battle. Vos let's slip that Ventress trained him and, with that info, Dooku begins to casually beat Vos and then knocks them both back with the force. I'm missing three pages at this point, but apparently Grevious joins in and both he and Ventress fall off a ledge or something. Vos is pissed and completely gives into his anger. He kicks Dooku in the face and Dooku tells him to give into his anger etc... Vos knocks the Count on his ass and then disarms him. As Vos attempts the final blow Dooku catches his wrist and flips Vos on his back effectively reversing their roles. Vos drops his saber and that's pretty much the end of it.

How's the characterization of Vos?

He's a wise cracking but serious and committed Jedi to his mission to down Dooku. I haven't made it to the fight scenes yet, tho.

He holds his own against Ventress/drives her back on Dathomir while recovering from intoxicating venom from a snake in a sparring match where she is training him to use the darkside:
