Yeah see a lightsaber is incredibly hot. Hot enough to cut through starship hulls and extremely thick/durable blast doors. And what did they use to kill the T-1000? Refresh my memory?

They used molten slag. Any slice from a saber will do immense damage, probably keep it from putting itself back together. And you are aware at the time of Episode 3, Grievous had killed a numerous amount of Jedi ranging from Padawan all the way up to Master? Seriously all he needs to do is do his saber buzzsaw trick once he closes the distance.
Allow me to correctly refresh your memory; T 1000 was SUBMERGED in the molten steel, a lightsaber has considerably less surface area. Also Grievous may have taken out masters but his fighting abilities are wildly inconsistent as we see him get totally owned in episode 3, if the lightsaber does manage to cut a T 1000 down the other two would stab the General in the face or his lung sac and be done with him
I remember the scene very well. Doesn't change the fact that a saber is probably hotter than the steel they dipped him in, and will easily cut through a T-1000, and since it melts anything it touches, it will keep it from reforming.
He only got beaten in 3 because Mace Windu crushed his lungs before that happened(it's why he was so slow and had that cough), and he fought pretty much the undisputed #1 defensive fighter in the universe at the time.
He's got 2 sabers in the first fight, and all 4 in the second, as well as his blaster. How will the T-1000's handle his saber buzzsaw? They certainly aren't fast like Kenobi or have his battle precog to predict his moves.
the fact that theres three of them in the battle is what really cinches it for the T 1000s, its debatable whether or not the T would just be able to reform after being sliced in half by a saber but even if it did do you think the other two are just standing on ceremony? best case for Grievous is get takes one down before the other two take him out, remember, he dent have force powers to help him out either so he's basically just a normal guy with exceptional skill with a saber

Blasters do superheat Tibana gas to levels that can burn holes clean through bodies(wearing armor) and explode chunks of duracrete and leave deep scorch marks and partially melted metal. So yeah, even the shots from his blaster(of which he has a lot and T-1000's aren't speed demons known to dodge and avoid gunfire) will more than likely leave holes that will be slow to mend if not impossible.
okay so after watching terminator 2 i shall settle this. The Polymetic T-1000 prototype had a healing rate that got more and more resistant through out the movie (this a personal note)
extreme cold (the liquid nitrogen) was enough to scramble its programing enough to start showing residue forming so it didnt fully mimic a person it came into contact with. the extreme heat was able to scramble the T-1000's sensors from finding john near the molten steel so it had to copy ms Connor to find him.
whilst lightsabers do not have the surface area of a vat of molten steel as shown it the movie it is considerable hotter and could even be used to fry the liquid circuitry in the T-1000, not only that the Blasters would do alot of damage that would pierce the T-1000 and the heat produced from the shot would slow down the healing rate of the prototype terminator incredibly. (kingD19 had an accurate description of the blaster as seen as above)
now saying all this this is just against 1 terminator- yes general Grievous sucks like hell but with 2 sabers and 2 blasters even he would win ( with a bit of luck) against 3 terminators but the terminators do have a relitively good chance.
if Grievous has 4 lightsabers (which is his base mode of attack and greatest saber style) then the stabbing weapons that are the terminators wont win 3 VS 1
