That scene was to illustrate that the previous freezing had damaged it. iirc, the DVD commentary confirms it.

do you think the T-1000's would not be able to work in unison to achieve killing grevious. 2 distract whilst the third forms behind the general

Well ignoring the fact that Grievous is overwhelmingly faster and can easily attack from several angles

yet cant stop a coughing fit to save his life.

That's because Windu crushed his lungs in the Clone Wars cartoon. But his organs never presented a problem in battle. So that's a moot point as he never stopped a fight because his chest was hurting.

T 1000's win. Stab the heart ftw.

If we use comics then a higher model got killed by two plasma blasts from TX too.

Shotgun blasts were blowing decent sized holes in the T-1000, a lightsaber would definitely be able to chop off parts of it. I don't know how Grievous would permanently kill it, but he could keep it at bay for a long time.

the shot gun blasts were getting weaker and weaker, when arnie and the 1000 were fighting over john in the corridor the shot gun blast put down the t-1000. in the steel mill it didnt even knock him off his feet

Yes but they still were making decent sized holes in him, so a lightsaber should chop off bits of him just fine.
