Nothing to the story. It's mostly visual enhancements for modern displays, along with some quality of life additions.
Pretty much the same things you can do with mods, without the hassle of setting up the mods.
I think some popular mods added some dialogue or quests that were left in an incomplete state, so that's one thing the EA left out. But I believe you can just mod those in if you want it, same as the old version.

If you seriously have a craving for boxing and you're on a plane or at a Mcdonald's, it's not bad.
It's certainly missing some boxers like Mike Tyson, Lennox Lewis, George Foreman, etc.
However, still a fun game, hits are brutal.
If you don't care about portability, I'd pick up literally any other boxing game that's past Fight Night Round 2 on any last-gen or current-gen system, they're all better.
