I'd probably choose a classic between IV and V. VIII is great though, probably the place to pick up the series if you are used to modern games.IX is great too, but it's light on the story.
I watched the trailer a week ago for this remake. I dunno why, but I felt disappointed. It's not the graphics, but I think it's the gameplay. It's just not the same if it isn't turn-based. And the gameplay seems to be more linear than the original.
The combat looks like garbage. No turn based tactics, no care. IMO a change that big is basically changing the entire genre of the game. The turn based combat was fundamental to FFVII.
remake RE4 as a first person run and hide simulator
remake Stellaris as a flight simulator
remake Silent Hill 2 as an MMO
remake Battlefield 3 as a visual novel
remake FIFA into a basketball game
remake Splinter Cell as a MOBA

They'll probably end up teasing it for the next few years, like what they did with Kingdom Hearts 3.
Hopefully the fact that they've kept us waiting this long means there isn't long left until we get the first part.
Hopefully.

TBH, I think a lot of people (myself included) wouldn't be disappointed if the game was a graphical upgrade while leaving everything else the same. But there's no way anyone at Square with any real power would sign off on something like that, so they were always going to change things.
I just hope that, even with the changes to combat and such, it's still enjoyable, and if they're making changes to the story/events, they're adding far more than they're subtracting. For example, let me, say, play a Vincent flashback or something. The silly humour and ridiculous limit breaks need to be maintained (though I liked how Cross-Slash looked in the trailer).
I don't expect Sony's recent hardon for censoring all of the things to impact FF7 too much, but I wouldn't be surprised.
We also got a release date: March 3rd, 2020.
Presumably, they still intend to break the game into parts and sell them individually with the other parts releasing later on...

2020 sure is a popular year isn't it.

Sounds like we'd be better off just waiting for the complete edition to happen.
