Well, he has been shown to generate and re-channel it, so he could most likely just redirect anything aimed at him via mjolnir. Doom's lightning would also just charge Tony up, and hasn't shown the damage output to hurt the Hulk. Only one it could potentially harm is Cap, and he himself has shown decent resistance to energy based attacks.
I'm going to play devil's advocate here:
Thor can generate lightning, doesn't mean he can absorb it. Pretty sure Mjolnir can do that, but he'll have to block every single electric strike that Doom does, which I don't think he can do.
Doom was also ridiculously durable. And though I don't think Doom is strong enough to seriously hurt Hulk or Thor, I also don't have any proof that Hulk and Thor can seriously hurt Doom. I mean, it took a supernova to take him out and even then it didn't kill him.

Doesn't necessarily have to absorb it. He was generating it from his own body, without his hammer, in a pool of water no less. If his body wasn't at least highly resistant to it, he'd have fried himself a long time ago already. Beyond that, he has insane levels of durability, so even if he wasn't specifically a lightning manipulator, I would argue that he could tank Doom's lightning, based on his own durability feats and the damage Doom's lightning has been shown to cause.

Well, what they called a "supernova" was actually a lot cooler than an actual one. Still extremely hot though. Sun surface temperature at least. But I think that between Iron Man, Hulk and Thor, they could probably figure out a way to BFR him. It's what the FF did at the end of the second film after taking back the Surfer's board. Ben smashed him away with a huge wrecking ball.

Well Mr Fantastic could pretzel hold Captain America cutting off Cap's breathing I mean he was able to do that to Thing who is stronger and more durable then Cap and Sue threaten Dr Doom that she create a force field insde his brain or heart and expand it might be able to do to Tony.
