Actually the JA books note that if he didn't get a master that year he would become too old for someone to take as a padawan so Ahsoka coulda easily been in the same position given how she was dumped on Anakin.

It does mention that Shii-Cho doesn't consider a lightsaber's ability to deflect energy blasts, so I can't imagine it'd specialize in deflecting energy blades.

At one time, most Jedi used the Makashi style of fighting when focused on lightsaber-to-lightsaber dueling After the fall of the Sith Empire. This style fell out of favour, as it was considered largely unnecessary.
