He did. Right after the part with Saba, he says that beating Luke and Saba together is impossible:
They had to. Jacen could defeat his mother or Ben without trouble; Saba, with difficulty. Saba plus Luke would be impossible odds. One of the Masters had to fall if Caedus was to survive this day.-- Legacy of the Force: Fury

Does anybody have the quote from the AOTC novel (I think it's from there) that says Anakin actually provided a challenge to Dooku? I can't seem to find it, but I recall somebody saying it exists.
Well you don't really need it. It's evident by his performance in the AotC novel.

Attack of the Clones
"I'm a slow learner," Anakin replied coolly, and he came on then, so suddenly, so powerfully, his green blade whirling with such speed that he seemed almost encased in green light. For the first time, Count Dooku lost his little confident smile. He had to work furiously to keep Anakin's blade at bay, dodging more than parrying. He tried to step out to the side, but stopped as if he had hit a wall, and his eyes widened a bit when he realized that this young Padawan, in the midst of that assault, had used the Force to block his exit.
"You have unusual powers, young Padawan," he sincerely congratulated. His little grin returned, and gradually Dooku put himself back on even footing with Anakin, trading thrust for slash and forcing Anakin to dodge and parry as often as he tried to strike.
Labyrinth of Evil
Once Master and Padawan, Kenobi and Skywalker had become the scourge of Dooku's existence. On Geonosis he had deliberately allowed them to pursue him - - just as Sidious had instructed him to do. Also as instructed, Dooku had made Kenobi aware of the existence of Darth Sidious, as a means of confusing the Jedi Order by telling them the truth. In the sloop's docking bay he had demonstrated his mastery to Kenobi and Skywalker - - although Skywalker hadn't been as easily defeated the second time they had dueled. Enraged, the young Jedi had proved a powerful opponent, and Dooku suspected that he had grown only more powerful since Geonosis.

Thanks Ant. Do you know a place where the quote is posted? ( somebody should really make that maul disrespect thread )
I wonder if you're interested in seeing it.

I've seen it. Only interested in quotes I can twist to suit my bias. 😛 ( just to clarify, that's a joke ).
