According to LDS (Mormon) mythology, it's because Lucifer wanted to remove free will and force all of us to have to live righteously so that not a single soul would be lost due to sin. Lucifer also wanted all glory for saving all souls.
But we have to take a step back in LDS Mythology.
First, Jesus Christ, Jehovah, wanted free will so people could grow and develop. At that point in time, because we existed as naive and innocent spirits with God, being in His Eternal Glory, we lacked true free will. According to some LDS beliefs, existing in the presence of God makes it extremely difficult to sin. Almost no free will at all. His overpowering Glory and Righteousness make it impossible for non-Godlike entities to sin or go against God's Will. People like Jehovah, Michael, and Lucifer were "sons of the morning" with Jehovah being the only spirit offspring of God that had Godlike intelligence. With a capital G.
To continue, Jehovah also understood that free will, out of the presence of God, would mean that people would sin and some would not return to Heavenly Father's presence. So there had to be a way for people to return to God, sinless, so that they could exist in God's presence. The Eternal Laws of Justice demand you must pay for your sins. But the Eternal Laws of Mercy say that a contrite, repentant, truly good person should not have to pay for their sins for eternity: that's not fair. So the compromise is to have a Godlike Intelligence endure an infinite amount of suffering that the Eternal Laws of Justice demand. As only a Godlike Intelligence is capable of enduring that suffering. Jehovah offered to pay the Eternal Laws of Justice on His siblings behalf, allow for an existence out of God's presence so that people would have free will so they could grow and develop, AND allow people to choose to be born into this mortal existence to risk the chance of turning away from God and His Eternal Glory. Because that's what it means to have Free Will.
LDS Mythology solves the Problem of Evil. We all had an informed decision to be born into mortality. Many, perhaps more than are born into the mortal realms, choose to not become mortals to grow and develop. The ones that are born here are spirits who are choosing the more difficult path. It is not that God created a universe with evil in it because he's evil. God created this universe specifically to help those temper themselves, through free will and choices, to become more like Him - a genuinely righteous path that leads to Objective Knowledge and an Eternal Existence that is unfathomable (evil is the outcome of free will and part of a set of God-creating tools). To grow and develop through the eternities so we can be like Him. "But doesn't God know you won't make it back?" Some speculate that God is a weak-God. That he can see all possible futures with very high-probabilities of certain paths for certain spirits but that he ultimately doesn't know which path you will take because Free Will is the essence of the Godhood and God cannot truly know the outcome of being born here. However, in LDS Mythology, God does assert that it is possible for every last soul, who is born here, to make it back to His Glory and Presence. He guarantees that it is possible for all, through this mortal existence, to make it back.
Without free will, you cannot develop. Without darkness, you cannot know light. If we chose to continue to remain as spirit existences in God's Presence, our Eternal Progress would be damned for eternity being unable to progress any further. Of course, there are philosophical exceptions within LDS beliefs to this but for the most part, only existing in God's presence is a limiting existence.
Also, I have my suspicions that reincarnation may be possible to continually test spirits until they improve, slowly over reincarnations over time, to make it back. Meaning, not Lucifer's plan but Jehovah's plan with one slight addition.
