Why was it an off panel fight? We saw Daxamites fighting the probe and then they were shown defeated.
How exactly is the probe shown defeating them. We see them reaching Imperiex’s ship. So the big guy takes them down.
Entire population of daxamites was defeated actually. Not just 100,000 Daxamites.

It was 1 Imperiex-Probe that defeated the 100,000 Daxamites like Abhi said. Imperiex-Prime was shown in his mothership while the war was going on, and when the armada attacked his ship, the Imperiex-Probes outside of it repealed the attack easily.
In JSA Our Worlds At War, Mister Terrific explains, Imperiex is creating the Probes from himself, he must be IN his mothership, while the energy returns to his ship, it then feeds it back to him, and the process starts all over again, giving him endless supply of mini versions of himself (which goes around and destroys galaxies). He left his mothership, which put the creation of Probes on hold.

Considering they are an offshoot of the Kryptonian race, and when empowered gives them powers similar, to the kryptonians, it should be close to an average Superman. They of course don't have his experience. 😱

They weren't just normal humans in a power suit (and even then, it doesn't mean much....Tony Stark and Doom are just humans in shiny suits).
They were juiced up on yellow sun. That automatically makes them more powerful than mere humans, with better tech than IM (who needs specialist armour to go into space). 100% Superman level? Nah. Even at 50%, though, there's still 100,000 of them. Even at 10% Superman level (and we've seen what a mere human like Stark can do with his suit), that still makes 10,000 Superman level beings.
That's such a crazy feat.

Even when stuck underground, the Daxamites were still powerful enough to blow through the underground bunkers with HV:
