A sparring match is designed to test the limits of one or more fighters. If Jen wouldn't have been tired after the fight if Carol wasn't pushing her. And Carol at normal power levels wouldn't have done so because of how strong Jennifer has become.

Oh and BTW....dudes get knocked out in sparring matches all the time

Where did it say Jen was tired and if Jen was going all out, when Cap lifted her hand up asking her to stop, why didnt Jen continue attacking? Why did she stop?
