Shang would beat Dick down in under a second. When's the last time Dick's deflected a bullet like Wonder Woman? Because Shang has done this, off a bracelet.
And Iron Fist is still fairly enhanced, without using the Iron Fist punch. He beat down Black Tarantula and bloodied Luke Cage without it.
He also defeated Steel Serpent when he lost the Iron Fist to him. The same Serpent who KO'd Spidey, and fought on an even level as he escalated his speed and striking power.

Nah Dick has deflected faster attacks than a bullet, I'd say Shang vs Tim Drake would be a fair fight

The car thing could just be anticipated counter measures too.
And any way you look at it, a guy fast enough to catch the things would still have no idea they were coming, unless he had a Spidey Sense.
That's not the point (I knew you were going to bring that up).
The point is, the timeline is:
1. GunS (multiple) fire, Firefly and Dick are in Position A.
2. Bullets hit, Firefly and Dick are in Position B.
So in between the guns firing and the multiple bullets hitting, Dick managed to move a full grown man plus his kit, from A to B.
That's beyond merely deflecting a bullet with a bracer. Even if we assume only ONE policeman was on target, moving a full-grown man and kit to block is more difficult than moving your own arm to block.

It's a different kind of feat though. Daredevil redirecting a bullet and Bane ripping an armored opponents leg off are both impressive feats, but not comparable feats.
Dick moving firefly around as a human shield is indeed highly impressive, for the reasons you state. They don't prove he can catch a bullet though, or redirect them with his batons, because that's a different skill set.
