There is a clear delay between the initial encounter as the Macy's associate's attention is clearly diverted away from the Black guy. I believe the associate said the word ****** and felt the distance and volume at which he uttered the epithet was enough to provide him safety.
I agree with you - there is definitely a delay from when they talked to each other originally and when he decided to sucker punch the Macy's employee from behind.
IMO, after he walked away from the Macy's employee, he was pissed that the gay dude touched him on the shoulder or arm. Talked a few seconds with his friend about it, then he said he was going to pop the dude in the face for touching on him. His friend whipped out his camera when he started walking to sucker-punch the Macy's employee.
How else did he know to bring out his camera to start recording?
There's an alternative position but it doesn't fit the video evidence - it was just a random act of violence like the knockout game. But that doesn't explain why the attacker's first words were to tell the macy's worker to not touch him.

The Macy's associate is "TOUCHING" The Black man while he is on the ground pleading. That is what The Black man is referring to in my expert opinion!

The attacker uses a present verb tense later in the video and actually says "stop touching me" making the point you're trying to make here, invalid.
When he says it the first time, the victim is not touching him.
