First we need to determine what exactly was MCU's version of Bleeding Edge. There are few who say it was the Civil War suit, while others think of the one he used against Thanos in Infinity War.

He put up a decent fight against Thanos. Hulk got stomped so bad he had PTSD the entire move from it. I think IM takes a comfortable win here.

Civil war wasn't Bleeding edge iirc, He started using his Bleeding edge Suit from Infinity War. The suit has the ability to form around him out of his arc reactor in his chest, and it can regenerate itself if it sustains damage. He even used it to close himself up after Thanos stabbed him. I don't recall his suit doing any of that in Civil war.
Yeah his Civil War armour was pretty standard.
I don't think that Thanos initially took Tony all that seriously TBH. It's only after he drew some blood that Thanos went harder at him and things went south for IM pretty quickly from there. On the other hand, Tony'd already gone through the fight with Cull and had been hit by a friggin' asteroid before engaging Thanos 1-on-1, so he'd probably already expended a bunch of his suit's resources/nanites by that point. Because, as we see towards the end of the fight, the suit had a finite amount of nanites that could be used for weaponry and armour regeneration. Does Hulk get any of his gladiator weapons for this fight?

Ah I forgot about IM vs Cull. That suggests to me that Hulk most likely still wins.
