They both came out around the same time, but who was actually created first?

But to answer your question Man-Thing came first

it has May 1971 for him and the other June or something.

That doesn't necessarily mean he was created first. Just which character was published first.

The first issue Man-Thing appeared in was Strange Tales #1--published in May 1971. Swamp Thing's first appearance was in House of Secrets #92--published in July 1971.

So Man-Thing has almost exactly 2 months of 'seniority' on Swamp Thing.

I know which one was published first, but is there a way to see who was created first? Or they could have been created around the same time.

I recall reading an article about them, which makes it quite clear that the creation is inconclusive. The creators were in discussion about the characters more or less at the same time but ST was published later for some editorial reason. I suppose it was in CBR.
