Worse yet suppliers simply don't have supply, I hear tell a local chain can't even get large soup container sizes.
Personally I think the answer lies in what Covid actually changed; vaccination status and Covid checks on border crossings.
A lot of undocumented's simply refuse the vax, which makes Coyote work even harder and makes secret border crossings useless without that documentation of vaccine status. It's probably impossible to fake in this digital age of everything being tracked.

Think of it like this; Pre Covid everybody cooked the books. They made profits but lied about how big the profits actually are. Suddenly Covid comes and everything gets shut down for two years.
How's it gonna look if after two years of nothing instead of being in the red like you should be, you're able to resume operations like nothing happened.
They act like they're broke so they don't get audited and go to jail.

Can I prove everyone cooks the books, no. But you know most do it, if not all.
And it stands to reason if you lie about where your bottom line is, you have less wiggle room if a recession hits, or events such as happened with a world wide pandemic.
