Now don't get me wrong, I know there are a select few guys such as Flava Flav, who actually get in the studio, sit behind a drum set and kick out a beat for a track and then pick up a bass and thump out a bass line and so forth, and yeah I actually do admire and respect him for that, but guys like him a few and way far between.
And that's the way it is.
First, I won't say it takes as much talent to master DJing as it does to master the guitar because it doesn't, but it's just as enjoyable to watch live. Second, a two year can pluck a guitar. Will it sound like shit? Yes. Will a 2 year old attempting to dj sound like shit? Yes.
There is more to it then just letting a record play on a turntable and occasionally scratching. Just basic sampling of a song is somewhat simple but takes a certain degree of practice and talent as well, it's not like you could just walk up to a turntable and start to make a beat. Once you get into mixing and scratching and all the other stuff that comes along with being a DJ, it's a pretty difficult thing to pull off. There are some amazing DJ's out there and it takes a lot more talent than you think.
Any 5 year old kid with a good voice can sing well. How many 5 year olds can rap well? Does that mean that rapping takes more talent than singing?

I dont think anyones saying that DJing takes more talent than playing a guitar. But in your example you state that a 2 year old can scratch a record which is true, on the other hand you could give a 2 year old a guitar and he could just as easily make some noise. The difference is the quality, anyone can scratch a record but not everyone can turn it into an artform like alot of the top Djs. I dont know if you have ever tried to scratch (im guessing not) but it is not as easy as you think especially when you have to time your scratching with a beat and a emcee rapping. The other point you made about emcees not being musicians strikes me as wrong to, they make music therefore they are musicians. Just because they cant play "Stairway to heaven" doesnt mean they are not musicians, just because they dont sing doesnt make them any less of a musician. They make music so by definition they are musicians whether you like it or not.
