The idea that they're Erestor and Glorfindel is awesome, but unfortunately doubtful.
Note that all of Elrond's house that did not leave when or before him were doomed to become Mortal Men and dwell in Middle-Earth until their deaths. Indeed Elrond's sons Elrohir and Elladan both chose this fate, and remaining in Middle-Earth they became Mortal. Arwen also became Mortal only because Elrond left Middle-Earth, for as the origin of the Elven Peredhil his offspring would only remain immortal so long as they dwelt with him.
Legolas is the only Elf I know of that left so far into the Fourth Age, but I may be mistaken in that my knowledge is insufficient concerning that time period to be certain.
Indeed, the Gwaith-i-Mírdain were by far the most gifted of all Elves in that time, and though Celebrimbor himself was slain in the War of the Elves and Sauron, the survivers of these elite smiths I do believe settled in Imladris, as it was closest to where they themselves had dwelt when they were at their height in power. And although Glorfindel did indeed spend at least a few hundred years in Gondolin before, in its fall, he slew and was slain by a Balrog. He then went to the Halls of Mandos, but he was there released and sent forth again at some point (maybe some odd hundred years) after the Istari were sent forth, and he went to Middle-Earth, and first among his achievements there he led the force that routed the forces of Angmar from Fornost after the Witch King's victory over Arthedain in Third Age 1975. From then on his exploits are unknown to me, but he did at some time, probably some 500+ (at least) years before the Lord of the Rings, settle in Imladris, and there he very well could have achieved greater skill in craftsmanship, but that is doubtful considering the constant threat of Minas Morgul and Dol Guldur, concerning which he counciled Elrond often. Then the next I know of him is finding Aragorn and the Hobbits on their way to Rivendell and helping them to come safely there, which included charging forward with a flaming brand (with Aragorn at his side doing likewise) and forcing the Nazgûl into the river Bruinen as the spell took effect and swept them away. After that he seems to vanish from all accounts, and I do not know what actions he might have taken.
So though it is a possibility (and a nice one at that), it is not likely that Glorfindel and Erestor are indeed the two Elves seen reforging Narsil, and it is indeed also doubtful that Glorfindel's skill in such areas came anywhere close to that of the Gwaith-i-Mírdain's, and so Glorfindel would not have been among those to reforge it when others were available that were quite obviously more skilled.

Information:Ringer Spy Gott pointed out something interesting: "Thought you might be interested in knowing that Glorfindel (as named so on a WETA-designed Decipher-card) is the elf that appears right before Arwen's banner at the coronation."
Interesting indeed! So they didn't cut Glorfindel after all...
