A valid complaint. And if I were only focused on getting the absolute best gear, it might bother me.
For me, it's about being able to work together with a good group of raiders to tackle bosses. It's about thinking of a plan after a bunch of wipes, executing it, and having it work. It's the challenge, and it's fun. So why play this year's Madden, when next year's will be better and newer? Because both are fun. Same idea.
The same could be said of any play style. PvP a lot? Find 1-4 others and tear sh*t up in the arena. It's fun as hell when you get good. Or grab a group and wreck battlegrounds. Or just show people what you are capable of (as with achievement farmers). For example: I tank heroic instances with my hunter pet. Nobody believes me until they see it. But I did my homework, put in the time to learn the best way to do everything, and I'm a damn good tank. Will I ever tank high-level raids? No. Will I ever be better than a well-geared tank class? Nope. But it's a great challenge, it provides an occasional service to my guild or Pug's, and proving people wrong is also hilarious.

That's true. I still think Naxx is good though if for no other reason than to get your feet wet with raiding at 80. And some of the gear is still quite good. And it's a fun raid.
A good point. Jumping into Ulduar with no raid experience is painful for all. Nax is a good starter raid. I'm not sure about fun (I do enjoy my weekly dps-check on Patchwerk), but good for a fairly new 80.
