Thematic. GL created a Galaxy where returning from the Dark side is impossible, as Yoda makes clear, and then makes Anakin the singular, after-six-films plot-based exemption. The exemption proves the rule and I will not break it. You go down, you stay down.
Hmm sounds good, I don't intend to go down anyways.
Isn't it reasonable for a jedi to play like it is not a done deal though?
The problem here is that the EU- which has redemption as a semi-regular occurrence, has created what I call a 'Revolving Door' policy for the Dark Side- where you can go in and come out again... and we get to a situation where some people now have the mindset:
"It doesn't matter THAT much if someone falls... they can always redeem themselves later."
Once you have that mindset the Dark Side loses its whole damn point. People lost to the Dark Side are LOST to it. Finito. And I want that to be very strong and clear in my game.

Hmm, that certainly gives that decision a lot more finalty (I probably just made up that word).
Although I had to think really hard to come up with the three other examples 😛
