He doesn't have to see them. He just has to shield himself and/or throw his hammer at her. It's that simple for him.

Just look at the Thor vs Doomsday thread. You'll find the scans there.

Shields won't work. This is what your not getting. Thor can simply absorb it or throw his hammer around her to negate it ala Juggernaut so she's vulnerable again.

Sure. Even if she has her shield up, Thor can erase her memory of the fight, put her to sleep, reverse her powers, etc.

hell no! It takes plently of time for him to do these things. Sue will kill him the second he tries to operate anything exotic. That was the comics downfall. They show Thor doing exotic things in which it takes him time to actually get it done.

He's done all those in an instant. He's shown he can swing his hammer at twice the speed of light. This means all it takes is less than an instant for him to swing his hammer and throw it.
