Some animal stuff!

When most non-predatorial birds get scared, they do something besides flying away screaming. What is that and why do they do it?

Some make themselves look big.. by flaring out their wings.. this warns off the predator by making the bird look to big for it to attack.

Some do that, but it wasn't what I meant.
It concerns the smaller birdies that have no chance imposing.
They feel threatened and fly away (yelling, to alert the others) but they do something else at takeoff.
Guess again.

They stick their heads in the ground.

No birds stick thier heads in the ground..

maybe throw some dirt at the attacker ?

That's pretty hard to do when flying away!
Actually, no bird does that in case of danger, it's a hoax. The ostrich that is said to stick it's head in the ground will run or attack instead when threatened, and it is quite good at both.
But back to the Q

Spit?

They use dirt to distract, then get away.

Do they say "I'll give you the keys to my nest, just please don't hurt me" ?

And that is the correct answer!
They take a crap during takeoff, so their falling poo might distract the predator. And it also decreases the birds weight so it can move a little faster.

some mislocated replies here, but Slay got the right one
