And, for whatever reason, Doctor Strange (or any other effective time manipulator) reverses time to before all these events happen, are those events canon from a usability standpoint? I mean, they never actually happened, but it's 616 characters, after all.

Originally his power was connected to a timer. Once he exceeded the timers limit he would return to hell. Thats why he rarely used his powers in the first few arcs. The timer no longer exists now so he can use what he wants.

Mainly opened via New God tech -- characters like DS can open them under their own power though.

So in that issue of Batman/Superman, how does Superman open one up when he takes Darseid to the Source Wall?

It is conjectured that due to the Sundip and incredible levels of rage, Superman actually traveled so fast that he broke not only the sound and light barrier, but also the 'space' barrier - thus creating a boom tube.
