Going for that one arm is still not an option as any single tentacle going for Wolverine's wrist, without him being completely unaware, will be removed. And since Logan has removed one pincer and Ock has the other two engaged in gripping his legs and other arm, what other arms does Ock have?

That's not really being faster than 'they can see', but faster than they can react or comprehend, which is absolutely feasible.
