I mean, I can see holding back some of the time. Bankai uses endurance a bit faster (though not so much that anyone there couldn't sustain it for a significant time), plus knowledge of them can help the enemy so you don't want to use them if you don't have to and later foes could take advantage.
When facing enemies who both know your bankai (*all* captains know each other's!) and is more powerful than you (or in Yamamoto's case, is more powerful than everyone but you)? Use the blasted bankai! Even Soi Fon used hers and she hates hers.

Btw, this applies to the evil captains as well. Tousen used his hollow release, but he should've used his bankai too. Gin's still on shikai. And Aizen? I know you *can* beat them all without bankai, but I'll point out you have no reason to, this is the big opposition, no need to hold them back that much.
Every Espada managed a release. Harribel didn't show her big techniques, but at least she had the sword out.
Maybe the captains that didn't use their bankai know they can't die because their "good guys". Or maybe they just think they're that superior to the enemy even though they are not. Tousen's release was crappy as heck. He had a ton of potential but was put out as another jerk that was taken out just as quick as he came.

Tousen really would've been better off using his bankai. Or preferably being a monster like that while in bankai.
They've already taken casualties so I don't think they believe the 'can't die' thing.
