Well Shinigami are similar to humans in anatomy, at least thus was my understanding, and Arrancar are Shinigami/Hollow hybrids.
I am not saying he pierced his carotid, the wound does not look deep enough to me, and was apparently a flesh wound, and as you said, his anatomy may be different, but I can see why ddm would think that.

well, Ulquiorra did say something about having "innards" and since he could not regenerate them, he died, so we can assume that he, and other arrancar, have something that functions as human organs inside them

So, it looks like Yammy being the 0 espada is just stupid. He's just really big and strong. Sure, physically stronger than the others, and much bigger. But, Ulq would take Yammy apart like he was nothing in even his base form. I'd say from Grimmjow on up, they could take out released Yammy...as they are fast and strong enough to cut him up.
Also, WTF!?!?!?!? Why don't we have Unohana finally showing why Shunsui and Ukatake are afraid of her? I want to see her finally show her just being uber and pwning Yammy like he was a chump.
Hopefully, Yammy interferes with their exit and Unohana gets a tad pissed and pwns Yammy like he was nothing. I want teh powerful wemonz!
