The scan suggest/implies that it is human nervous sytems. Galactus doesn't have neurons.
It's not unreasonable since she regularly routes and reroutes enormous electromagntic phenonema through her body.
Either she controls her own nervous system to keep herself from blowing apart, or her own nervous system is somehow "different" than a normal human.
She does metabolize ambient electrical fields, constantly, that's why she can shoot lightning from her hands without clouds.

Just as she hasn't been shown to beaable to change the color of the electricity beyond the normal, or change the smell of it. Without statements that she can doesn't.

That scan backs that up by describing it as a glittering cataract, which to me says she sees it as like a rush of sparkling lights, similar to what I described.
