This is ridiculous.
Dehydration? Yeah, right. Ever read Hulk: The End? He's the last living thing on Earth and survives solely because of his healing factor. No water, no food, nothing.
Freeze him? And then what? You can't kill Hulk. It's been proven that Hulk is immortal. He's regenerated from atomic DUST before. And yes, Hulk is a walking gamma reactor. Given time, he'd defrost himself.
Knock him out? Fat chance. It takes someone like Thor and Juggernaut to knock him out, and neither of them have been able to pull that off for ages.
And one more thing, Hulk has shown an odd ability to reject manipulation to his body. People have tried to transform him into other things before, but he wills himself to remain normal. Slowing his molecules falls under such a thing, and Hulk could probably resist it. He's also been turned to stone before by some guy that can do such. Hulk wasn't just encased in stone, he BECAME stone. And you know what happened? Hulk reverted back into organic matter in moments. Molecular manipulation is not that good against Hulk.
Plus... He's the HULK! In WWH, he beat like two or three X-Teams in one sitting. You know who was amongst them? A mutant named Darwin that can on-the-spot evolve defenses against threats. He got an energy-draining ability. It didn't work. And he couldn't develop anything after that. If freezing Hulk were any kind of real defense, Darwin would have pulled that out. Nightcrawler said it best; "The only defense against the Hulk is to be somewhere else".
