So from what it seems, the red, yelow, and white audio/video cables are the only way to hook it up right? Which is fine by me. 😄
Composite IS the standard red/white/yellow setup. S-Video is the next step up, which carries the video as two signals, brightness and color, which is supposed to give a better picture because the cables don't reduce the quality of the original image as much.
Component cables are the red/blue/green ones, which because they mix the three primary colors of light, allow for "truer" color and better color contrast overall.

Do you need a certain kind of television to hook it up or do you have to buy the S-Video or Component cables seperately?
Do any of the other systems use these?

Component. S Video is inferior. The next step up is HDMI.

The 360 does not have HDMI for some odd reason.
The component cables will only upgrade your picture on a non-HDTV to at most 480i which is DVD quality.
