The aesthetic of the OT has always irked me; especially in games like Battlefront where you get to compare the two eras directly. (I always liked playing as the Republic more than the Empire.)
It's the scruffiness, alongside the bizarre ship-design. Tie-fighters always seemed really silly to me. X-wings were cool, though.
Hi-tech universes should have at least one shiny (non-gay, sorry 3P0) kind of technology. The lightsaber is a stopgap measure, but I'd really like for the Chiss to come out of left field during the final scenes in ANH. (Or RotJ. But ESB is a masterpiece.)
I kind of preferred the OT's rugged but real look compared to the PT's video game CG look.
