Malazan Book of the Fallen. There isn't much romance (most epic fantasy series are light on the romance) nor are their princesses and knights but rather generals and soldiers (it's far more gritty than most fantasy novels) still there are tons of wizards and dragons. Be warned though, they are difficult books to read at least difficult compared to most fantasy novels.Wheel of Time also fits your description, perhaps even more aptly than Malazan, but there is a massive slump in the middle.

I'm one of the few people who are rather ambivalent to the Stormlight Archives. I found it to be rather lackluster with almost nothing happening until the very end. Still, it's far better than Sanderson's Mistborn which was downright atrocious.

Most of the books are difficult. Now only does he not explain or describe many things but seemingly minor plot points and details become critical as the story progress and there is a ridiculous amount of characters and seemingly disparate plots.

Really enjoying it so far. The prelude set a really nice tone for the book and the fight scenes read really well. The magic system also seems really interesting and quite well done, and I've heard Sanderson is arguably the best in the business when it comes to creating magic systems. Not very far into it at all though.

If you like overly defined magic systems so they lose all their mystery and, well, magic and instead become mundane and feel like they magic was ripped from an RPG then sure, he writes good magic systems. 😉 Thankfully, he doesn't do this in the Way of Kings, but I wouldn't be surprised to see him explain every rule and nuance of the magic in the following novels.
