Be warned though, they are difficult books to read at least difficult compared to most fantasy novels.
Wheel of Time also fits your description, perhaps even more aptly than Malazan, but there is a massive slump in the middle.

These are 2 recommendations I've been given elsewhere but I've heard things that have put me off of both of them, namely that reading through Malazan feels more like work than a joy and that it doesn't have a very focused story, and that Wheel of Time I've heard from a lot of people is just nowhere near the quality of something like ASOIAF.
Is there anything else aside from those two? Apparently the Stormlight Archive is really good (planned ten book series but so far only the first two have been published, each over a thousand pages). Also heard great things about The Farseer, Man of his Word, Memory, Sorrow and Thorn, and especially The Chronicles of Thomas Covenant.
Damn it! Apparently Count Dooku was originally going to be the villain in TCW Season 6 Mace and Jar Jar arch. We could have seen Mace vs Dooku:

^ Given it was essentially the same story, I'm guessing they would have just had a small fight, and then when Dooku's plan failed he would have retreated.
Still it's good to know they had Mace vs Dooku in mind. Just chose to use Talzin instead due to the whole "I want to absorb the Force" plot. Not due to any potential issues of having Windu face Dooku.

It sounds like the show had some really interesting arcs, and I only ever watched it briefly, but my main problem with it is that I feel it didn't really respect the tone and continuity of the films, and as such I simply couldn't take it that seriously. Plus the first few episodes were pretty weak imo (only ones I watched) and didn't really focus on building an arc, but just standalone episodes. The show, from its very first episode, should have created or hinted at an arc that would continue across the entire season and maybe even the entire show, and that's something that would have got me excited.
Something like the Quinlan Vos story spread through the Republic and Clone Wars comics. Having something like that in tv show form would have been so awesome.
