If they are both suppose to be fighting at their best then batman would already be prepared for superman. For batman to be at his best he needs to do reconnaissance on who ever it is before the initial fight. Meaning now that batman would be prepared for almost anything. Despite superman's thinking speed; I mean even if superman fights smart, what could he throw at batman, and batman would not be ready for?
Who is to say that if superman tried using his superman speed, some counter measure somewhere is not going to activate preventing superman from using his super speed?
This has been touched upon. A good example is the first meeting between batman and superman. With batman telling superman that there is force field around him, should superman cross it somebody is going to die.
Another one I think is an elseworld, where superman tried to use his heat vision and inadvertently activated missile of some sort.

If it is a prep battle batman is going to win
If it is a bloodlust lust match superman is going to win
