Because while he had TOAA's INFINITE power, he did not have TOAA's omniscience. Notice that he was also surprised to see Warlock. He had just came out of a blind rage and was realizing what he had done, when Warlock surprised him. By the same token, at this point in time, Thanos thought that Death hated him. She had already barred him from her domain and spurned him at every turn. He and Warlock were just discussing how he had never been able to achieve his one true goal(which was to capture the heart of Mistress Death). Then She suddenly appeared out of nowhere, so of course he was surprised.

A. He was Thanos. He responds in typical Thanos fashion throughout the entire event. He was 'manipulated' by the 'Supreme Power' by TOAA letting him take his power without a fight because he KNEW how everything would go down. That's one of the perks of omniscience.
B. Villains threaten to destroy heroes all the time, how often does it actually happen. Thanos absorbed all of time during that fight. The abstracts all bow to LT, he's just never been STUPID enough to go and wipe out Death. And yes your right, LT didn't beg.
C. I have my results, TOAA's power has better feats without even needing his omniscience.
